Apple Cake with Maple-Walnut Cream Cheese Frosting:
Preheat oven at 350 degrees. Butter and flour cake pans. Combine apples and water in small saucepan, cover and simmer until apples are tender. Puree mixture until smooth. Sift 2 ½ cups flour, toss currents into bowl and mix in walnuts. Beat sugar, butter, brandy and vanilla until blended. Beat in eggs 1 at a time. Beat in ½ of flour mixture and 1 ¼ cups apple puree and remaining flour mixture. Divide batter among pans and bake.
Maple and Wine Soaked Apple Cake:
Pour wine and maple syrup into a saucepan and stir until thoroughly combined. Heat and bring to boil. Peel, core and quarter apples. Cut carefully to create fan effect. Add apples to wine and maple syrup mixture and leave until it cools. Preheat oven, grease and line Swiss roll tin with baking parchment. Beat eggs, margarine, flour and sugar until smooth. Spoon and spread mixture into Swiss roll tin. Drain the apples and place wine back onto heat until thick. Arrange soaked apples into sponge mixture, bake and pour over the wine syrup. Cut and serve warm or cold.
Upside down Maple Apple Gingerbread Cake:
For this, combine butter and ½ cup maple syrup and pour into greased cake pan. Scatter raisins over the mixture and arrange sliced apples. Combine ½ cup sugar and syrup and beat in egg. Combine flour, baking soda, spices and salt and beat into syrup mixture. Combine melted butter and boiling water, add to batter and pour batter over apple slices and bake for 45 minutes. Turn out and serve warm topped with whipped cream or ice cream.
Apple Dessert Cake with Maple Syrup:
Preheat oven and grease and flour a ring tin. Puree the apple, peel, core and dice remaining apples. In a bowl, mix flour, mixed spice, nutmeg, sugar and salt and rub butter through fingertips until mixture resembles fine breadcrumbs. In another bowl, whisk eggs, oil and vanilla until smooth. Add pureed apple and combine flour mixture with egg mixture, then fold in diced apple pieces. Pour batter into tin and bake until golden. Cool and serve with maple syrup or topped with vanilla ice-cream.
