Peanut Butter-Chocolate Stuffed French Toast With Jam Syrup
Ingredients
  • ½ cup peanut butter
  • 8 slices bread
  • ¼ cup mini chocolate chip
  • ½ cup milk
  • 3 large eggs
  • 2 tbsp sugar
  • 1 tsp pure vanilla extract
  • 1 pinch salt
  • 2/3 cup grape jam or jelly
  • 1 tbsp butter
  • whipped cream, for serving
Peanut Butter Chocolate Stuffed French Toast With Jam Syrup

Directions
  • Spread 1 tbsp peanut butter on each bread slice. Divide the chocolate chips into 4 slices, top with the remaining bread slices, peanut butter side down, to make 4 sandwiches.
  • In a shallow bowl, whisk together the milk, eggs, sugar, vanilla and salt. Soak each sandwich in the egg mixture until saturated, about 5 seconds. Transfer the sandwiches to a large platter in a single layer.
  • In a small saucepan, cook the jam and 3 tbsp water over low heat, stirring occasionally, until warm and smooth.
  • In a large skillet, melt ½ tbsp butter over medium-high heat. Add half of the sandwiches and cook until golden, about 2 minutes on each side. Repeat with the remaining butter and sandwiches. Slice and serve with the whipped cream and jam syrup.

Strawberry Stuffed French Toast
Ingredients:
  • 4 thick slices of bakery-style bread
  • Strawberry jam
  • 4 ounces fat-free cream cheese, softened
  • Egg Beaters egg substitute - to equal 6 large eggs
  • ½ cup vanilla
  Strawberry Stuffed French Toast

Strawberry Syrup:
  • ¾ cup strawberry jam
  • ¼ cup water
  • 2 tbsp cornstarch
  Strawberry Jam Syrup

Procedure:
  • Spray fat-free butter spray on frying pan at medium setting. On 2 slices of bread, spread a thick layer of jam. Make a cream cheese and jam sandwich.
  • Beat egg substitute and vanilla. Dip each sandwich into batter. Cook each side until golden brown.
  • Transfer to plate, cut into triangles, and sprinkle heavily with powdered sugar. Top with freshly sliced strawberries and strawberry syrup.
  • Syrup: Bring all ingredients to boil until jam is liquid, but somewhat thick. If it's too thin, let syrup sit without any heat for 5 minutes; stir and it should be ready.
