Honey Cake
Ingredients
  • 3 cups all-purpose flour
  • 1½ tsp. baking powder
  • ¼ tsp. ground cinnamon
  • ½ tsp. baking soda
  • 1 tbsp. instant coffee
  • ½ cup boiling water
  • ¼ cup vegetable or peanut oil
  • 1 cup honey
  • Grated peel of 1 washed orange
  • 2 tablespoons brandy or any whiskey
  • 4 eggs
  • 1 cup sugar
  • 1 cup chopped walnuts

Procedure:
  • Combine flour, baking powder, cinnamon, and baking soda; set aside. Mix the instant coffee with the water; blend in the oil, honey, orange peel, and brandy.
  • In a large bowl, beat the eggs until frothy; gradually add the sugar and beat until light. Add to the honey mixture.
  • Combine the flour mixture alternately with the honey mixture, starting with flour and ending with flour. Stir in the walnuts.
  • Pour the batter into an oiled and waxed paper-lined 13 by 9 by 2-inch baking pan. Bake in a 325°F oven for about 50 minutes. Test with a toothpick. If moist, continue baking until a toothpick inserted in the center comes out clean.
  • Invert the cake onto a wire rack. Cool. Peel off the waxed paper and wrap in aluminum foil to maintain freshness.
 
Barbecued Chicken Lebanese
Ingredients:>
  • 1 cleaned broiler-fryer chicken, 3 pounds, quartered
  • 3 tablespoons corn oil
  • ¼ cup honey
  • 1 tbsp. lemon juice
  • 2 tbsp. original Worcestershire sauce
  • 1½ tsp. salt
  • 1 tsp. onion powder
  • ¼ tsp. garlic powder
  Barbecued Chicken Lebanese
 
Procedure:
  • Brush chicken with oil.
  • Arrange chicken on rack over a slow charcoal fire; grill 15 minutes, turning occasionally.
  • Meanwhile, combine honey with remaining ingredients; mix well.
  • Baste chicken with honey mixture; grill uf1tilchicken is done, 30 to 40 minutes longer, turning and basting occasionally with honey mixture.
 
Honey Flapjacks
Ingredients:
  • 200 gm Honey
  • 400 gm Porridge oats
  • 200 gm Demerara sugar
  • 200 gm Unsalted butter
  • 50 gm Nuts, dried fruits, glacé ginger, chopped or desiccated coconut

Procedure:
  • Place the butter, sugar and honey in a saucepan and heat it.
  • Stirring occasionally, till the butter has melted and sugar has dissolved.
  • Add the oats and nuts, fruit, ginger or coconut to it and mix well.
  • Greased a 20cm x 30cm cake tin and place the oat mixture to the prepared cake tin.
  • Spread it to about 2 cm thick.
  • Smooth the surface with the back of a spoon.
  • Bake it in a preheated oven at 350 degrees F for about 15-20 minutes, till lightly golden around the edges, but still slightly soft in the center.
  • Let it cool in the tin, and then turn out.
  • Cut it into squares, when cool.
 
Sweet And Sour Raita
Ingredients:
  • 2 Cups natural yogurt
  • 2 tbsp Honey
  • 1 tsp Salt
  • 1 Green chili, seeded and sliced
  • 1 tsp Sugar
  • 1 ½  tsp Mint sauce
  • ½ Red onion, peeled and chopped
  • 1 tbsp Chopped coriander leaves
  • A few mint leaves for garnish
  Sweet And Sour Raita
 
Procedure:
  • Place yogurt in a bowl and add mint sauce, green chillies, salt, onions, sugar, honey and coriander laves. Mix well.
  • Add more salt/honey/sugar, if required.
  • Garnish with mint leaves
  • Serve.
