There are some interesting facts about maple syrup

• The life span of maple tree is almost 30 years
• Once you start tapping the sap the diameter of the tree increases
• No permanent damage is caused to the tree as just 10% of the sap is collected every year.
• The maximum number of taps a tree can have is four
• Each tap gives at an average 10 gallons of sap per season that yields one quart of syrup.
• The maple season may last for 4 to 6 weeks but the sap flow is heavy only for 10 to 20 days.
• The heaviest flow of sap that lasts for 10 to 20 days is called “run”
• To condense one gallon of maple syrup one needs to boil 30-50 gallons
• To make maple candy, cream and sugar the maple syrup is boiled more than the stipulated time
• To produce eight pounds of candy sugar you require one gallon of syrup
• The sugar content of sap averages 2.5%
• The sugar content of syrup averages 66.5%
• One gallon pure maple syrup equals to 11 pounds.
